Ground Beef Ramen Recipe

Ingredients
  

  • 1 lb ground beef (80/20)
  • 3 packs instant ramen noodles (3 oz each), seasoning packets discarded
  • 3 tbsp soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 1 tsp toasted sesame oil
  • 2 garlic cloves, minced
  • 1 tsp grated fresh ginger
  • 1 cup shredded carrots
  • 3 green onions, sliced
  • 1 tbsp neutral oil
  • Pinch of red pepper flakes (optional)
  • Sesame seeds, for garnish

Method
 

  1. Heat oil in a large skillet over medium-high, crumble in beef, and let sit 2 minutes before breaking it up. Cook until browned, about 5 minutes.
  2. Whisk soy sauce, brown sugar, vinegar, and sesame oil. Push beef aside, cook garlic and ginger 30 seconds, then stir everything and add the sauce.
  3. Boil ramen noodles according to package directions (about 3 minutes), drain, and do not rinse.
  4. Add carrots and noodles to the skillet, tossing over medium heat for 2 minutes until carrots soften and everything is coated.
  5. Remove from heat, fold in half the green onions and red pepper flakes. Serve in bowls topped with remaining green onion and sesame seeds.

Notes

Discard the ramen seasoning packets or save for another use. For a saucier bowl, double the sauce ingredients, the noodles absorb liquid quickly.
