Ingredients

  • 1 lb 80% lean ground beef
  • 1 large yellow onion, sliced thin
  • 1 medium green bell pepper, sliced thin
  • 2 cloves garlic, minced
  • 2 tsp Worcestershire sauce
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • 4 slices provolone cheese
  • 4 hoagie rolls, split but not cut all the way through
  • 1 tbsp butter, softened

Method

  1. Sauté onion and bell pepper in a skillet over medium-high heat with a drizzle of oil until softened and spotty brown, about 6 minutes. Set aside.
  2. Add ground beef to the skillet, break into large chunks, and sear 2 minutes. Break into crumbles, season with salt and pepper, and cook until no pink remains, about 5 minutes.
  3. Heat broiler with rack 6 inches from heat. Butter cut sides of rolls, place buttered-side up on a baking sheet, and broil until golden, about 2 minutes.
  4. Stir garlic and Worcestershire into the beef and cook 30 seconds. Return peppers and onions to the pan, toss, then divide filling among rolls. Top each with a slice of provolone.
  5. Broil until cheese is bubbling and spotty brown, about 2 minutes. Serve hot.

Notes

If your broiler runs hot, check the cheese at the 1½-minute mark to avoid burning. The filling can be made ahead and reheated; just toast fresh rolls right before serving.
