Ground Beef Pasta Recipe

Ingredients
  

  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1 (28 oz) can crushed tomatoes
  • 2 cups beef broth
  • 12 oz rotini pasta, uncooked
  • 1/2 cup heavy cream
  • 1/4 cup grated parmesan
  • 1 cup shredded mozzarella
  • Salt and pepper, to taste
  • Fresh basil or parsley, chopped, for garnish

Method
 

  1. Heat 1 tbsp olive oil in a large skillet over medium-high heat and brown 1 lb ground beef with 1 diced onion, about 6 to 7 minutes, until no pink remains.
  2. Stir in 3 cloves minced garlic, 1 tsp Italian seasoning, and 1/2 tsp red pepper flakes, and cook 1 minute until fragrant.
  3. Add the 28 oz crushed tomatoes, 2 cups beef broth, and 12 oz uncooked rotini, bring to a boil, then cover and simmer 12 to 14 minutes, stirring occasionally, until the pasta is tender.
  4. Reduce the heat to low and stir in 1/2 cup heavy cream and 1/4 cup parmesan until the sauce thickens and turns deep orange, then season with salt and pepper.
  5. Top with 1 cup shredded mozzarella, cover for 2 minutes until melted, then garnish with fresh basil and serve hot.

Notes

If you want to get ahead on this, you can brown the beef and onion a day early and keep it in the fridge, then pick up at step 2 when you're ready to cook. Leftovers thicken up a lot as the pasta keeps absorbing sauce, so plan on stirring in extra broth or milk when you reheat.
