Ingredients

  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tsp smoked paprika
  • Salt and pepper, to taste
  • 1 sheet frozen puff pastry, thawed

Method

  1. Heat oil in a skillet over medium heat. Cook onion and garlic until soft, about 2 minutes.
  2. Add ground beef and cook, breaking it up, until browned, about 8 minutes. Stir in tomato paste and smoked paprika and cook 1 minute. Season with salt and pepper, then set aside to cool.
  3. Roll puff pastry into a 12-inch square on a floured surface. Cut into 4 equal squares.
  4. Spoon cooled filling onto the center of each square. Moisten edges with water, fold into triangles, and seal with a fork. Cut a small slit on top of each.
  5. Preheat oven to 400°F (200°C). Place pies on a parchment-lined baking sheet and bake 20-25 minutes until puffed and golden. Serve hot.

Notes

These pies freeze well. Freeze them unbaked on a tray, then store in a bag for up to 2 months. Bake straight from the freezer, adding 5-8 minutes to the time.
