Ingredients
  

  • 1 tbsp vegetable oil
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 tbsp grated fresh ginger
  • 1 lb lean ground beef
  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp brown sugar
  • 1 tbsp toasted sesame oil
  • 1 to 2 tsp sriracha
  • 1 head butter lettuce
  • Shredded carrot, fresh cilantro, chopped roasted peanuts, and lime wedges for serving

Method
 

  1. Heat the vegetable oil in a large skillet over medium-high heat. Cook the onion until softened, 3 to 4 minutes, then stir in the garlic and ginger for 30 seconds.
  2. Add the ground beef and break it into crumbles. Brown it, stirring occasionally, until no pink remains, 5 to 6 minutes. Drain excess fat if needed.
  3. Mix the soy sauce, rice vinegar, brown sugar, sesame oil, and sriracha in a small bowl. Pour over the beef and cook for 2 minutes until the sauce thickens and coats the meat.
  4. Spoon the warm filling into lettuce leaves and top with carrot, cilantro, peanuts, and lime. Serve immediately.

Notes

The beef filling can be made up to 3 days ahead and reheated. Always assemble the wraps right before serving so the lettuce stays crisp.
