- In a large bowl, combine ground beef, onion, garlic, 1/4 cup parsley, cumin, coriander, paprika, salt, and pepper. Mix with hands just until spices are evenly distributed; do not overwork.
- Divide mixture into 8 equal portions. Shape each around a skewer to form a flattened log about 4 inches long and 1 inch thick. Chill 10 minutes if the meat feels soft.
- Preheat a grill to medium-high (400°F). Brush kabobs with olive oil. Grill 4 to 5 minutes per side, until charred outside and internal temperature reaches 160°F, about 8 to 10 minutes total.
- Transfer to a platter, rest 2 minutes, then top with extra parsley and a squeeze of lemon. Serve warm.
Notes
Chilling the shaped kabobs for even 10 minutes helps them hold together on the grill. If you’re short on time, you can skip it, but handle them carefully when flipping. Resting is non-negotiable for a juicy result.
