Ingredients

  • 1 tbsp olive oil
  • 1 lb ground beef, 85/15
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tsp Italian seasoning
  • 1 (15 oz) can crushed tomatoes
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 (16 oz) package shelf-stable potato gnocchi
  • 3 cups fresh baby spinach (optional)
  • 1 cup shredded low-moisture mozzarella

Method

  1. Heat olive oil in a large skillet over medium-high. Brown ground beef until no pink remains, about 5 minutes.
  2. Add diced onion and cook 3 minutes, then stir in garlic and Italian seasoning for 30 seconds.
  3. Pour in crushed tomatoes, salt, and pepper. Bring to a simmer, add uncooked gnocchi, stir gently, cover, and cook 5 to 7 minutes until tender and sauce thickens. Add spinach in the last minute if using, cover to wilt.
  4. Turn off heat, top evenly with shredded mozzarella, cover and let melt 2 to 3 minutes.
  5. Scoop onto plates, garnish with fresh basil if desired, and serve hot.

Notes

If the sauce reduces too much, add a splash of water when you add the gnocchi. The spinach is optional, but it wilts right into the sauce and adds a nice boost of vegetables without any extra work.
