Method
- Heat 1 tbsp oil in a large skillet over medium‑high heat. Add ground beef, season with salt and pepper, and cook until browned and crispy, about 5‑6 minutes. Transfer to a plate.
- Reduce heat to medium. Add eggs and cook, stirring gently, until just set, about 1 minute. Transfer to the plate with the beef.
- Add remaining 1 tbsp oil, then onion and frozen peas and carrots. Cook 2 minutes. Add garlic and ginger, stir 30 seconds. Add cold rice, soy sauce, and sesame oil. Cook 3‑4 minutes, pressing rice into the pan until heated through and a few grains are golden.
- Return beef and eggs to the skillet, add scallions, and toss until hot, about 1 minute. Serve immediately with extra scallions and sesame seeds.
Notes
Cold, day‑old rice gives the best texture. If you need to cook rice fresh, spread it on a sheet pan for 15 minutes to cool and dry out before you start the stir‑fry.
