Ground Beef Fajitas Recipe

Ingredients
  

  • 1 lb ground beef
  • 1 tbsp vegetable oil
  • 1 red bell pepper, sliced into strips
  • 1 medium yellow onion, halved and sliced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • Juice of ½ lime
  • 8 small flour or corn tortillas
  • Toppings: sour cream, salsa, chopped cilantro, crumbled cotija, sliced avocado

Method
 

  1. Set a large skillet over medium-high heat. If using lean beef, add the oil. Crumble in the ground beef, cook until no longer pink (5–6 minutes). Transfer to a plate, drain all but 1 tablespoon fat.
  2. Add the bell pepper and onion to the skillet. Cook until softened with charred spots, 4–5 minutes. Stir in the garlic, cook 30 seconds.
  3. Return the beef to the pan. Add chili powder, cumin, smoked paprika, salt, and pepper. Toss and cook 1 minute. Squeeze the lime juice over the filling and mix.
  4. Warm tortillas in a dry skillet 30 seconds per side, or microwave in damp paper towels 30 seconds. Spoon the filling into tortillas and add toppings.

Notes

Leftover filling keeps well for four days and makes an excellent burrito lunch the next day.
