Ground Beef Egg Roll in a Bowl Recipe

Ingredients
  

  • 1 lb ground beef
  • 1 bag (14-16 oz) coleslaw mix
  • 3 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp toasted sesame oil
  • 1 tbsp honey
  • 2 green onions, sliced
  • 1 tsp sesame seeds

Method
 

  1. Brown ground beef in a large skillet over medium-high heat, breaking it apart, until no pink remains, 5 to 6 minutes.
  2. Add garlic and ginger, cook 30 seconds, then add coleslaw mix; cook 3 to 4 minutes until wilted.
  3. Mix soy sauce, rice vinegar, sesame oil, and honey; pour over beef mixture, stir and cook 1 to 2 minutes.
  4. Remove from heat, top with green onions and sesame seeds, serve immediately.

Notes

If you don’t have coleslaw mix, thinly slice 4 cups green cabbage and shred 1 cup carrot. For a gluten-free version, use tamari instead of soy sauce.
