Ingredients
  

  • 1 lb ground beef (85% lean)
  • ½ cup cottage cheese
  • ½ small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tsp smoked paprika
  • ½ tbsp olive oil
  • Salt and black pepper
  • Optional toppings: diced tomato, sliced avocado, chopped cilantro, lime wedges

Method
 

  1. Heat olive oil in a skillet over medium-high heat. Add ground beef and diced onion, breaking up the meat, and cook until browned, about 6 to 8 minutes. Add garlic for the last minute.
  2. Stir in soy sauce, smoked paprika, salt, and pepper. Cook 1 minute more until fragrant and coated.
  3. Spoon cottage cheese into bowls, pile the hot beef on top, and finish with desired toppings. Serve immediately.

Notes

Cottage cheese is best served cold right from the fridge so the contrast with the hot beef is sharp. If you prefer a warm bowl, you can gently heat the cottage cheese on its own, but it will soften and release more liquid. For meal prep, keep the beef and cottage cheese in separate containers until you’re ready to eat.
