- Heat oil in a large pot over medium-high heat. Brown the beef deeply, breaking into chunks, about 6-7 minutes.
- Reduce heat to medium. Add onion and salt, cook 3 minutes. Add garlic, cook 30 seconds. Stir in tomato paste, chili powder, cumin, smoked paprika, and oregano; cook 1 minute until fragrant.
- Pour in tomatoes, beans, broth, salt, and pepper. Bring to a simmer, then cook uncovered for 15 minutes, stirring occasionally. Add more broth if needed.
- Ladle into bowls and top with sour cream, cheese, and green onions. Serve immediately.
Notes
For the fullest flavor, make the chili a day ahead. If you like a thicker consistency, let it simmer uncovered for an extra 5 minutes.
