Ground Beef Chili Recipe

Ingredients
  

  • 2 tbsp olive oil
  • 1 lb ground beef (85/15)
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 2 tbsp chili powder
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 (15 oz) can fire-roasted diced tomatoes, undrained
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 2 cups beef broth (low-sodium)
  • ½ tsp kosher salt
  • ½ tsp black pepper

Method
 

  1. Heat oil in a large pot over medium-high heat. Brown the beef deeply, breaking into chunks, about 6-7 minutes.
  2. Reduce heat to medium. Add onion and salt, cook 3 minutes. Add garlic, cook 30 seconds. Stir in tomato paste, chili powder, cumin, smoked paprika, and oregano; cook 1 minute until fragrant.
  3. Pour in tomatoes, beans, broth, salt, and pepper. Bring to a simmer, then cook uncovered for 15 minutes, stirring occasionally. Add more broth if needed.
  4. Ladle into bowls and top with sour cream, cheese, and green onions. Serve immediately.

Notes

For the fullest flavor, make the chili a day ahead. If you like a thicker consistency, let it simmer uncovered for an extra 5 minutes.
