Ground Beef Burritos Recipe

Ingredients
  

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 (16 oz) can refried beans
  • 1 cup shredded Mexican blend cheese
  • 4 large (10-inch) flour tortillas

Method
 

  1. Cook beef and onion in a skillet over medium-high heat until the meat is no longer pink, about 6-8 minutes; drain fat, then stir in garlic, chili powder, cumin, salt, and pepper and cook 1 minute.
  2. Warm refried beans in a small saucepan over low heat, stirring, 3-4 minutes; add a splash of water if too thick.
  3. Spread beans down the center of each tortilla, top with beef and cheese, fold in sides, and roll tightly.
  4. Sear burritos seam-side down in a dry nonstick skillet over medium heat until crisp on both sides, 2-3 minutes per side; serve warm.

Notes

Add any favorite toppings — sour cream, salsa, lettuce, tomato — right after searing. If you don’t plan to sear all four burritos at once, sear just what you need and refrigerate the rest as un-seared rolls.
