- Cook beef and onion in a skillet over medium-high heat until the meat is no longer pink, about 6-8 minutes; drain fat, then stir in garlic, chili powder, cumin, salt, and pepper and cook 1 minute.
- Warm refried beans in a small saucepan over low heat, stirring, 3-4 minutes; add a splash of water if too thick.
- Spread beans down the center of each tortilla, top with beef and cheese, fold in sides, and roll tightly.
- Sear burritos seam-side down in a dry nonstick skillet over medium heat until crisp on both sides, 2-3 minutes per side; serve warm.
Notes
Add any favorite toppings — sour cream, salsa, lettuce, tomato — right after searing. If you don’t plan to sear all four burritos at once, sear just what you need and refrigerate the rest as un-seared rolls.
