Ground Beef Burrito Bowl Recipe

Ingredients
  

  • 1 lb ground beef (85/15 or 90/10)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp dried oregano
  • ½ tsp kosher salt, plus more to taste
  • ¼ tsp black pepper
  • 2 tbsp tomato paste
  • ¼ cup water
  • 1 cup long-grain white rice
  • 2 cups water
  • ¼ tsp salt
  • 1 (15-oz) can black beans, drained and rinsed
  • 1 cup frozen corn, thawed
  • 1 ripe avocado, sliced
  • ½ cup salsa
  • ½ cup sour cream
  • ½ cup shredded cheddar or Mexican blend cheese
  • ¼ cup chopped fresh cilantro
  • 1 lime, cut into wedges

Method
 

  1. In a saucepan, combine rice, 2 cups water, and ¼ tsp salt. Bring to a boil, then cover and simmer on low for 18 minutes. Let rest covered.
  2. Cook beef and onion in a large skillet over medium-high heat, breaking apart, for 7 to 8 minutes until no longer pink. Drain excess fat.
  3. Add garlic, chili powder, cumin, smoked paprika, oregano, salt, pepper, tomato paste, and ¼ cup water. Simmer 5 minutes until thickened. Adjust salt.
  4. Divide rice among bowls, top with beef, beans, corn, avocado, salsa, sour cream, cheese, cilantro, and a lime wedge. Serve hot.

Notes

If you use leftover rice, you can skip step 1 and the total time drops to about 15 minutes. For a little extra kick, stir a pinch of cayenne into the spice mix.
