- Heat a large skillet over medium-high. Add oil if needed, then crumble in ground beef. Cook until browned, about 5 minutes.
- Push beef aside. Add onion and bell pepper; cook 3 minutes until soft. Stir in garlic, chili powder, cumin, and rice; cook 1 minute.
- Stir in tomatoes with juices and beef broth. Bring to a boil, then reduce heat to low. Cover and simmer 15 minutes, until rice is tender and liquid mostly absorbed.
- Remove from heat. Top with cheddar, cover, and let stand 2 to 3 minutes until melted. Serve with parsley.
Notes
If you’re using lean ground beef, don’t skip the olive oil; it keeps the rice from sticking. Leftovers reheat best with a splash of broth or water to bring back moisture.
