Method
- Heat the oil in a large skillet over high heat. Add the ground beef in an even layer and sear undisturbed for 2 minutes until browned. Break it up and cook until no longer pink, about 3 minutes.
- Push the beef aside, add a splash more oil if needed, and cook the garlic and ginger for 30 seconds until fragrant. Mix everything together.
- Add the cabbage and stir fry for 2 minutes until beginning to wilt. Pour in the soy sauce, rice vinegar, and sugar, toss well, and cook 1 more minute.
- Remove from heat, drizzle on the sesame oil and half the scallions, and toss. Serve over rice topped with the remaining scallions.
Notes
If you use low‑sodium soy sauce, taste before adding any extra salt. The cabbage releases a little moisture as it cooks; if the sauce looks watery, let it bubble uncovered for an extra 30 seconds until it thickens slightly.
