Ground Beef and Broccoli Recipe

Ingredients
  

  • 1 lb ground beef (80/20)
  • 4 cups broccoli florets
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1/3 cup soy sauce
  • 3 tbsp brown sugar
  • 1 tbsp cornstarch
  • 2 tbsp water, for the cornstarch slurry
  • 1/4 cup water, for steaming the broccoli
  • 1 tbsp vegetable oil
  • 1/2 tsp red pepper flakes (optional)
  • Sesame seeds, for garnish (optional)

Method
 

  1. Heat the 1 tbsp vegetable oil in a large skillet over medium-high heat and brown the 1 lb ground beef for 5 to 6 minutes, until no pink remains.
  2. Add the 4 cups broccoli florets and 1/4 cup water to the skillet, cover, and steam for 4 minutes, until bright green and tender crisp.
  3. Whisk together the 1/3 cup soy sauce, 3 tbsp brown sugar, 3 cloves minced garlic, 1 tbsp grated ginger, and 1/2 tsp red pepper flakes if using, stir in the cornstarch slurry made from 1 tbsp cornstarch and 2 tbsp water, then pour into the skillet and simmer 2 to 3 minutes until thickened.
  4. Toss to coat everything evenly and serve immediately over rice, topped with sesame seeds if desired.

Notes

If you like extra sauce for spooning over rice, mix a second half batch of the sauce ingredients and simmer it separately, then pour it on at the table. This recipe doesn't need any resting or chilling time, it's meant to go straight from the pan to the plate.
