Ground Beef Alfredo Recipe

Ingredients
  

  • 8 oz fettuccine
  • 1 lb lean ground beef
  • 3 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1/2 tsp kosher salt, plus more for the pasta water
  • 1/4 tsp black pepper
  • pinch of nutmeg
  • chopped fresh parsley, for serving

Method
 

  1. Bring a large pot of salted water to a boil. In a skillet over medium-high heat, brown the ground beef with 1/4 tsp salt and the pepper, about 6 minutes, then transfer to a plate.
  2. Cook the fettuccine in the boiling water until al dente, reserve 1 cup pasta water, then drain.
  3. In the same skillet over medium heat, melt the butter and cook the garlic for 30 seconds. Add the heavy cream and simmer for 2 minutes, scraping up browned bits.
  4. Remove from heat, stir in the Parmesan in batches with the remaining 1/4 tsp salt and nutmeg. Return the beef and pasta to the pan, toss with tongs, and add pasta water as needed to coat.
  5. Plate into bowls and top with fresh parsley.

Notes

Grate the cheese yourself if you can; it makes a silkier sauce. If you prefer a thinner sauce, add a little more pasta water than the recipe calls for. Leftovers reheat gently on the stove with a splash of milk.
