- Preheat a grill to medium high (400°F / 200°C) with one side set to low or off. Mix salt, pepper, garlic powder, paprika, onion powder, and thyme. Dry the turkey well, rub with olive oil, then coat with spices. Let sit 10 minutes.
- Sear the turkey over direct heat for 2 to 3 minutes per side until deep grill marks appear and the crust is set.
- Move the breast to indirect heat, close the lid, and cook 10 to 12 minutes, until the thickest part registers 160°F (71°C) on an instant read thermometer.
- Transfer to a cutting board, tent with foil, and rest 5 minutes. Slice against the grain and serve with any juices from the board.
Notes
If your turkey breast is much thicker than 1.5 inches, use the timing table above and always check temperature rather than relying on the clock. Pull at 160°F to hit 165°F after resting, so the meat stays juicy all the way through.
