- Drain the tuna and combine it in a bowl with the mayonnaise, celery, red onion, lemon juice, salt, and pepper. Mix until just combined.
- Butter one side of each bread slice. Lay two slices buttered side down, top with cheese, the tuna mixture, another slice of cheese, and the remaining bread, buttered side out.
- Heat a nonstick skillet over medium heat. Place the sandwiches in the skillet and cook 2 to 3 minutes until golden, then flip, cover, and cook another 2 to 3 minutes until the second side is golden and the cheese is melted. Serve immediately.
Notes
If the bread is browning faster than the cheese melts, slide the skillet off the heat for a minute while leaving the lid on. This gentle carryover heat finishes the melt without burning the crust.
