Grilled Shrimp Skewers Recipe

Ingredients
  

  • 1 lb extra-large raw shrimp (16/20 count), peeled and deveined
  • 3 tbsp olive oil
  • 3 garlic cloves, minced
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 2 tbsp chopped fresh parsley, plus more for serving
  • Lemon wedges
  • Skewers, metal or soaked wooden

Method
 

  1. Whisk together the olive oil, garlic, lemon juice, zest, salt, pepper, and red pepper flakes. Pat shrimp dry, add to the bowl, and marinate for 10 minutes.
  2. Thread shrimp onto skewers, leaving a little space between each. Use two parallel skewers per row to prevent spinning.
  3. Preheat grill to medium-high (about 400°F / 200°C). Place skewers on the grill, close the lid, and cook 2 to 3 minutes until charred and pink on the bottom. Flip and grill 1 to 2 minutes more until opaque and firm.
  4. Transfer to a platter, squeeze fresh lemon over the top, and shower with parsley. Serve immediately with extra lemon wedges.

Notes

If using wooden skewers, remember they need a 20-minute soak before threading, that time isn’t included in the prep. The acid in the marinade can start to firm up the shrimp after 15 to 20 minutes, so grill right after marinating for the juiciest result.
