- In a small bowl, whisk together 2 tbsp olive oil, 3 minced garlic cloves, zest of 1 lemon, 2 tbsp lemon juice, 2 tbsp chopped parsley, ¾ tsp kosher salt, and ½ tsp pepper.
- Pat 4 skin-on snapper fillets dry. Brush all over with the marinade and let sit while you heat the grill.
- Heat a grill to medium-high (400°F). Clean and oil the grates. Place fillets skin-side down, cover, and cook 4 to 5 minutes without moving. Flip and cook 3 to 4 minutes more, until the fish reaches 135°F in the thickest part.
- Transfer to plates, squeeze extra lemon wedges over top, and serve immediately.
Notes
If your snapper is thicker than an inch, add a minute or two per side and check the temperature early. The fish will continue cooking for a moment after it leaves the grill, so pull it at 135°F and let it rest just briefly before serving.
