Grilled Pineapple Chicken Recipe

Ingredients
  

  • 2 lbs boneless skinless chicken thighs
  • 1 small ripe pineapple, cut into ½-inch rings
  • ⅓ cup pineapple juice
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 2 garlic cloves, minced
  • 1 tsp grated fresh ginger
  • ½ tsp red pepper flakes
  • 1 tbsp vegetable oil
  • Salt and freshly ground black pepper
  • Sliced scallions and sesame seeds for garnish

Method
 

  1. Whisk pineapple juice, soy sauce, brown sugar, vinegar, garlic, ginger, red pepper flakes, oil, salt, and pepper. Reserve ¼ cup for basting.
  2. Marinate chicken in the remaining mixture at room temperature for 15 to 30 minutes.
  3. Grill chicken on a preheated medium-high grill, 5 to 7 minutes per side, basting with reserved marinade near the end.
  4. Grill pineapple rings 2 to 3 minutes per side until charred.
  5. Rest chicken 5 minutes, slice, and serve with pineapple, scallions, and sesame seeds.

Notes

If you only have time for a quick 15-minute marinade, the chicken will still be flavorful. For the best char on the pineapple, pat the rings dry with a paper towel before they hit the grill.
