Ingredients
  

  • 4 boneless skinless chicken breasts (6 to 8 oz each), pounded to ½-inch thickness
  • 2 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 2 garlic cloves, minced
  • 1 ½ tbsp lemon pepper seasoning
  • Kosher salt (optional)
  • Lemon wedges, for serving

Method
 

  1. In a large bowl, whisk together the olive oil, lemon juice, minced garlic, and lemon pepper seasoning.
  2. Add the pounded chicken and toss to coat evenly; let it sit for 5 minutes at room temperature.
  3. Grill over medium-high heat (about 400°F) for 5 to 6 minutes per side, until the thickest part reaches 165°F.
  4. Rest the chicken on a cutting board for 5 minutes, then slice against the grain and serve with lemon wedges.

Notes

If you are using a low-sodium lemon pepper blend, taste the marinade and add a pinch of salt before coating the chicken. Pounding the breasts to an even thickness is the single most important step for juicy, evenly cooked chicken.
