Ingredients
  

  • 4 boneless skinless chicken breasts (about 6 oz each)
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 3 garlic cloves, minced
  • 1 tsp dried oregano
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • Chopped fresh parsley, for serving (optional)
  • Lemon wedges, for serving

Method
 

  1. Whisk olive oil, lemon juice, lemon zest, garlic, oregano, salt, and pepper in a small bowl until the salt dissolves.
  2. Place chicken in a dish, pour marinade over it, and turn to coat. Let sit at room temperature for 10 minutes while the grill heats, or refrigerate up to 2 hours.
  3. Heat a grill to medium-high (400°F / 200°C). Grill chicken 5 to 6 minutes per side, until the internal temperature hits 165°F (74°C) and the outside has good char marks.
  4. Rest the chicken 5 minutes, then slice across the grain. Serve with parsley and a squeeze of fresh lemon.

Notes

If you have the time, marinate up to 2 hours in the fridge for deeper flavor; the 10-minute soak still gives a bright, tangy result. Pat the chicken dry before grilling if you marinate longer so it sears instead of steaming.
