Grilled Cod Fillets with Garlic Butter Recipe

Ingredients
  

  • 4 cod fillets (about 6 oz each, 1 inch thick)
  • 2 tbsp olive oil
  • Salt and black pepper
  • 3 tbsp unsalted butter
  • 2 garlic cloves, minced
  • 1 tbsp fresh lemon juice
  • 2 tbsp chopped fresh parsley

Method
 

  1. Preheat a grill to medium-high (400°F). Pat cod dry, coat with olive oil, and season with salt and pepper.
  2. Oil the grates, place fillets at a 45-degree angle, and grill 4 minutes without moving.
  3. Flip gently with a thin spatula and grill 3-4 minutes more, until opaque and flaky.
  4. While fish rests, melt butter with garlic over low heat. Off heat, stir in lemon juice and parsley, then spoon over the cod and serve.

Notes

Let the fish rest a minute after grilling before adding the garlic butter so the residual heat doesn’t turn the garlic bitter. If your fillets are thicker than 1 inch, add a minute or two per side and check with a fork.
