Grilled Chicken Tacos Recipe

Ingredients
  

  • 1 ½ lbs boneless skinless chicken thighs (about 6)
  • 3 tbsp olive oil
  • 3 tbsp fresh lime juice
  • 3 cloves garlic, minced
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp kosher salt
  • 8 small corn or flour tortillas
  • ½ cup sour cream
  • 1 tbsp fresh lime juice
  • Pinch of salt
  • 2 Roma tomatoes, seeded and diced
  • ¼ cup finely chopped white onion
  • 2 tbsp chopped fresh cilantro
  • ½ jalapeño, seeded and minced (optional)
  • 1 tbsp fresh lime juice
  • Salt to taste

Method
 

  1. Whisk together oil, 3 tbsp lime juice, garlic, chili powder, cumin, smoked paprika, and 1 tsp salt. Add chicken, coat, and let sit at room temperature for 15 to 20 minutes.
  2. Preheat grill to medium-high, about 400°F. Grill chicken 6 minutes, flip, and cook another 5 to 6 minutes until 165°F.
  3. Let chicken rest 5 minutes, then slice across the grain into strips.
  4. Warm tortillas on the grill 30 seconds per side. Fill with chicken, drizzle with lime crema (whisk sour cream, 1 tbsp lime juice, and pinch of salt), and top with pico de gallo. Serve hot.

Notes

If you have time, let the chicken marinate in the fridge for up to 2 hours. The pico de gallo and crema can be made while the grill heats up. For the juiciest result, don’t skip the resting step.
