Grilled Chicken Quesadilla Recipe

Ingredients
  

  • 2 boneless, skinless chicken breasts (about 1 lb)
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp vegetable oil
  • 4 large flour tortillas (10-inch)
  • 2 cups shredded Monterey Jack cheese
  • 2 tbsp butter

Method
 

  1. Preheat grill or skillet to medium-high (425°F). Rub chicken with chili powder, cumin, garlic powder, salt, pepper, and oil. Grill 6-7 minutes per side to 165°F. Rest 5 minutes.
  2. Slice chicken across the grain into thin strips.
  3. Sprinkle 1/4 cup cheese on half of each tortilla, add chicken strips, top with another 1/4 cup cheese, and fold.
  4. Melt butter in a skillet over medium heat. Cook quesadillas 2-3 minutes per side until deep golden and crisp, adding butter as needed.
  5. Slice into wedges and serve immediately.

Notes

Letting the grilled chicken rest is key so the juices don’t make the quesadilla soggy. If you’re using leftover or rotisserie chicken, warm it and toss with a pinch of the spice mix before assembling.
