- Pat the chicken dry, coat with olive oil, then season all sides with the salt, pepper, garlic powder, smoked paprika, and dried thyme. Let sit at room temperature for 20 to 30 minutes while the grill preheats.
- Set up a two-zone grill for medium-high indirect heat (around 400°F/200°C). Place the chicken skin side up on the cool side, close the lid, and cook 30 to 35 minutes without turning.
- Move the chicken skin side down over direct heat and sear 3 to 5 minutes until the skin is deep brown and crisp. Flip and sear the underside 1 to 2 minutes, then check for 175°F to 180°F (79°C to 82°C) in the thickest part.
- Transfer to a board, rest 5 minutes, and slice between the thigh and drumstick. Serve hot.
Notes
Any resting time on the counter before grilling helps the chicken cook more evenly, so don’t rush it. If your grill runs hot, check the temperature 5 minutes early during the indirect phase to avoid overcooking.
