Grilled Chicken Pasta Salad Recipe

Ingredients
  

  • 8 oz dried rotini pasta
  • 1 lb boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper
  • 1 cup halved cherry tomatoes
  • 1 cup diced cucumber
  • 1/2 cup thinly sliced red onion
  • 1/3 cup crumbled feta cheese
  • 1/4 cup extra-virgin olive oil
  • 3 tbsp fresh lemon juice
  • 1 garlic clove, minced
  • 1/2 tsp Dijon mustard
  • 1/2 tsp dried oregano

Method
 

  1. Heat a grill to medium-high (400°F). Rub the chicken with 1 tbsp olive oil, 1 tsp oregano, salt, and pepper. Grill 6 to 7 minutes per side until the internal temperature hits 165°F. Rest for 5 minutes, then slice.
  2. Boil the pasta in salted water until al dente. Drain, rinse under cold water, and toss with a little olive oil.
  3. Whisk the 1/4 cup olive oil, lemon juice, garlic, Dijon, 1/2 tsp oregano, salt, and pepper until combined.
  4. Toss the pasta, tomatoes, cucumber, onion, and chicken with most of the dressing. Top with feta and serve with the remaining dressing on the side.

Notes

Let the chicken rest before slicing so the juices redistribute. If you plan to serve the salad later, keep the dressing separate and toss it in shortly before eating.
