- Heat grill to medium-high, about 400°F (200°C). Pound chicken to ½ inch thickness, brush with olive oil, and season with salt, pepper, garlic powder, and Italian seasoning. Grill 5 to 7 minutes per side until internal temp reaches 165°F (74°C).
- While chicken grills, warm the marinara sauce in a small saucepan over low heat for 3 to 4 minutes, stirring a few times.
- Spoon warm marinara over each grilled chicken breast, top with mozzarella and Parmesan, then close the grill lid or broil for 2 to 3 minutes until cheese melts and bubbles.
- Transfer to plates, scatter torn basil over the top, and serve hot.
Notes
If your chicken breasts vary a lot in size, give the thicker ones an extra minute on the grill and check the temperature. The prep time accounts for heating the marinara while the chicken cooks. A grill pan on the stovetop works beautifully if you do not have an outdoor grill.
