- Whisk lime juice, olive oil, garlic, cumin, chili powder, smoked paprika, oregano, salt, and pepper. Add chicken, toss to coat, and marinate at least 15 minutes.
- Preheat grill to high heat. Remove chicken from marinade and grill 5-7 minutes per side until internal temp reaches 165°F and charred.
- Toss peppers and onion with olive oil and salt, then grill 8-10 minutes, turning once, until softened and blackened.
- Rest chicken a couple minutes, slice against the grain, and serve on a platter with vegetables, warm tortillas, and toppings.
Notes
If using chicken breasts instead of thighs, pound them to an even thickness and grill about 4-5 minutes per side. For extra smoky flavor, you can toss the vegetables with a few drops of liquid smoke before grilling.
