- Heat a grill pan over medium-high heat. Brush chicken with olive oil, season with ¼ tsp salt and a pinch of pepper, and grill 4 to 5 minutes per side until 165°F (74°C).
- Whisk together mayonnaise, grated parmesan, lemon juice, anchovy paste, garlic, mustard, remaining ¼ tsp salt, and pepper until smooth.
- Rest the chicken a few minutes, then slice thinly. In a large bowl, toss the romaine with most of the dressing, the shaved parmesan, and the chicken strips.
- Warm the tortillas, divide the mixture among them, drizzle on any remaining dressing, roll tightly, and slice each wrap in half on the diagonal.
Notes
If you only have thick chicken breasts, slice them in half horizontally and pound to ½ inch. Let the chicken rest a minute or two before slicing so the juices settle. Any leftover dressing tastes even better the next day and will keep in the fridge for up to 3 days.
