Grilled Chicken Caesar Salad Recipe

Ingredients
  

  • 2 boneless skinless chicken breasts (about 1 lb), sliced into 4 thin cutlets
  • 3 tbsp olive oil, divided
  • 4 cloves garlic (2 minced, 1 grated, 1 left whole)
  • 1 lemon, juiced (about 4 tbsp total)
  • Salt and black pepper
  • 2 cups cubed day-old bread
  • 2 tbsp olive oil
  • Pinch of salt
  • 4 oil-packed anchovy fillets
  • 1 large egg yolk
  • 1 tsp Dijon mustard
  • 1/2 cup extra-virgin olive oil
  • 1/4 cup finely grated Parmesan cheese, plus more for shaving
  • 1 large head romaine lettuce, chopped

Method
 

  1. Preheat grill or grill pan to medium-high heat (about 400°F). In a bowl, mix 2 tbsp olive oil, 2 minced garlic cloves, 2 tbsp lemon juice, salt, and pepper. Add chicken cutlets, coat, and marinate 10 minutes at room temperature.
  2. In a food processor, combine anchovies, egg yolk, Dijon, the grated garlic clove, and 2 tbsp lemon juice. Blend until smooth, then slowly pour in 1/2 cup olive oil while blending until thick, about 1 minute. Stir in 1/4 cup grated Parmesan, salt, and pepper.
  3. Heat a skillet over medium heat with 2 tbsp olive oil. Add bread cubes, stir to coat, and cook until golden and crisp, 5 to 7 minutes. Sprinkle with a pinch of salt and set aside.
  4. Grill chicken cutlets for 4 to 5 minutes per side, until internal temperature reaches 165°F. Rest 5 minutes, then slice across the grain.
  5. Rub the inside of a large bowl with the whole garlic clove. Add romaine and half the dressing, toss to coat. Pile onto plates, top with sliced chicken, croutons, and shaved Parmesan. Serve warm.

Notes

A grill pan on the stovetop gives excellent results; just oil the grates well. If you’re really short on time, a good store-bought Caesar dressing and rotisserie chicken will still make a fine salad, but those homemade croutons are worth the few extra minutes.
