Grilled Chicken Burritos with Creamy Chipotle Sauce Recipe

Ingredients
  

  • 1 lb boneless skinless chicken thighs
  • 2 tbsp olive oil
  • 2 tbsp fresh lime juice
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 cup sour cream or Mexican crema
  • 2 tbsp mayonnaise
  • 2 chipotle peppers in adobo sauce, minced
  • 1 tsp adobo sauce
  • 1 tsp lime juice
  • Pinch of salt
  • 4 large flour tortillas
  • 1 cup cooked white or brown rice
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 cup shredded cheese
  • 1 cup shredded lettuce
  • Optional: pico de gallo or diced tomatoes

Method
 

  1. Whisk together olive oil, 2 tbsp lime juice, cumin, chili powder, smoked paprika, garlic, and 1/2 tsp salt; coat chicken thighs and marinate for 15 minutes at room temperature.
  2. Grill chicken over medium-high heat (400°F) for 5 to 6 minutes per side until internal temp reaches 165°F; rest 5 minutes, then slice.
  3. Blend sour cream, mayonnaise, minced chipotles, adobo sauce, 1 tsp lime juice, and a pinch of salt until smooth to make the chipotle sauce.
  4. Warm tortillas in a dry skillet for 30 seconds per side; fill each with rice, beans, sliced chicken, cheese, lettuce, and a drizzle of sauce, with optional pico de gallo.
  5. Fold burritos tightly, then toast seam-side down in a skillet over medium heat for 1 to 2 minutes per side until golden. Slice and serve with extra sauce.

Notes

Marinating time is not included in the prep time above, so plan a few extra minutes for that. For a quick version, use leftover grilled chicken and store-bought chipotle mayo. If you like extra crunch, tuck a few tortilla chips inside before rolling.
