- Whisk the yogurt, olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper in a bowl until smooth.
- Add the chicken, coat well, and marinate at room temperature for 20 to 30 minutes, or refrigerate up to 2 hours. Pound any thick pieces even before adding.
- Heat a grill to high (about 450°F), clean and oil the grates. Grill the chicken for 5 to 6 minutes per side, without moving it early, until the internal temperature hits 165°F.
- Move the chicken to a plate, brush with any reserved clean marinade or a little oil and lemon, and rest 5 minutes.
- Slice against the grain and serve with the resting juices spooned over top.
Notes
If you set aside a few spoonfuls of marinade before adding the raw chicken, you can use it as a finishing glaze. Always discard any marinade that touched raw meat. For even faster prep, buy thin-sliced chicken cutlets and skip the slicing step.
