Ingredients
  

  • 2 boneless skinless chicken breasts (about 1 ½ lb total), sliced in half horizontally
  • ⅓ cup plain whole milk yogurt
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 3 garlic cloves, minced
  • 1 ½ tsp dried oregano
  • 1 tsp smoked paprika
  • 1 tsp kosher salt
  • ½ tsp black pepper

Method
 

  1. Whisk the yogurt, olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper in a bowl until smooth.
  2. Add the chicken, coat well, and marinate at room temperature for 20 to 30 minutes, or refrigerate up to 2 hours. Pound any thick pieces even before adding.
  3. Heat a grill to high (about 450°F), clean and oil the grates. Grill the chicken for 5 to 6 minutes per side, without moving it early, until the internal temperature hits 165°F.
  4. Move the chicken to a plate, brush with any reserved clean marinade or a little oil and lemon, and rest 5 minutes.
  5. Slice against the grain and serve with the resting juices spooned over top.

Notes

If you set aside a few spoonfuls of marinade before adding the raw chicken, you can use it as a finishing glaze. Always discard any marinade that touched raw meat. For even faster prep, buy thin-sliced chicken cutlets and skip the slicing step.
