Grilled Chicken and Broccoli Bowl Recipe

Ingredients
  

  • 2 boneless, skinless chicken breasts (about 1.5 lbs total)
  • 1.5 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tbsp toasted sesame oil
  • 1 garlic clove, minced
  • 1 tsp grated fresh ginger
  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp honey
  • 1 tsp toasted sesame oil
  • ½ tsp grated fresh ginger
  • 1 garlic clove, minced
  • 1 large head broccoli (about 1 lb), cut into florets
  • 2 tbsp neutral oil (avocado or vegetable)
  • Salt and black pepper
  • 1 cup dry jasmine rice
  • 1 green onion, thinly sliced
  • 1 tsp sesame seeds

Method
 

  1. Heat grill to medium-high (400°F). Stir together 1.5 tbsp soy sauce, 1 tbsp rice vinegar, 1 tbsp honey, 1 tbsp sesame oil, 1 minced garlic clove, and 1 tsp grated ginger. Pour over chicken, turn to coat, let sit 15 minutes.
  2. Toss broccoli with oil, ½ tsp salt, and pepper. Grill in a basket or on foil 6–8 minutes, tossing once, until charred and tender.
  3. Remove chicken from marinade, discard marinade. Grill chicken 6–8 minutes per side until 165°F. Rest 5 minutes.
  4. Whisk together 3 tbsp soy sauce, 1 tbsp rice vinegar, 1 tsp honey, 1 tsp sesame oil, ½ tsp ginger, 1 minced garlic clove until honey dissolves.
  5. Slice chicken. Divide rice among bowls, top with broccoli and chicken, drizzle with sauce, garnish with green onion and sesame seeds. Serve immediately.

Notes

If marinating longer than 30 minutes, refrigerate the chicken, then let it sit at room temperature for 15 minutes before grilling. The sauce can be made a day ahead and kept in the fridge.
