- Cook beef with oil and taco seasoning in a skillet over medium-high heat until browned, about 6 minutes. Stir in 2 tbsp water, simmer 1 minute, then remove from heat.
- Warm the tortilla, then layer it with beans, rice, beef, 1/2 cup cheese, sour cream, and any extras. Fold the sides in and roll the burrito tightly, squeezing gently.
- In a dry nonstick skillet over medium heat, sprinkle the remaining 1/2 cup cheese in a circle. Place burrito seam-down on the cheese, press, and cook 3-4 minutes until the cheese is golden and lacy. Flip and toast the other side for 1 minute.
- Slice the burrito in half and serve hot with extra sour cream or salsa.
Notes
The cheese crust is at its crackliest right off the pan. Leftovers reheat best in a skillet, not a microwave.
