Grilled Cheese Burrito Recipe

Ingredients
  

  • 1 large burrito-size flour tortilla (10-12 inches)
  • 1/2 lb lean ground beef
  • 2 tbsp taco seasoning
  • 1/3 cup refried beans
  • 1/3 cup cooked white or Mexican rice
  • 1 cup shredded Mexican-blend cheese, divided
  • 2 tbsp sour cream
  • 1 tbsp vegetable oil
  • Optional fillings: diced tomatoes, pickled jalapeƱos, chopped cilantro

Method
 

  1. Cook beef with oil and taco seasoning in a skillet over medium-high heat until browned, about 6 minutes. Stir in 2 tbsp water, simmer 1 minute, then remove from heat.
  2. Warm the tortilla, then layer it with beans, rice, beef, 1/2 cup cheese, sour cream, and any extras. Fold the sides in and roll the burrito tightly, squeezing gently.
  3. In a dry nonstick skillet over medium heat, sprinkle the remaining 1/2 cup cheese in a circle. Place burrito seam-down on the cheese, press, and cook 3-4 minutes until the cheese is golden and lacy. Flip and toast the other side for 1 minute.
  4. Slice the burrito in half and serve hot with extra sour cream or salsa.

Notes

The cheese crust is at its crackliest right off the pan. Leftovers reheat best in a skillet, not a microwave.
