Ingredients

  • 2 slices sourdough bread
  • 2 tbsp salted butter, softened
  • 4 slices American cheese
  • 8 oz ground beef (80/20)
  • ½ tsp kosher salt
  • ½ tsp black pepper
  • 2 tbsp mayonnaise
  • 1 tbsp ketchup
  • 1 tsp sweet pickle relish
  • ½ tsp white vinegar
  • 4 dill pickle chips, optional

Method

  1. In a small bowl, whisk mayo, ketchup, relish, and vinegar. Set aside.
  2. Heat a skillet over medium-high. Shape beef into two patties just bigger than bread, season with salt and pepper. Sear 3 minutes per side for medium, then rest.
  3. Butter one side of each bread slice. In a clean skillet over medium-low, place 2 slices butter-side down, top with cheese, and close sandwiches. Cook until golden, about 3 minutes per side.
  4. Place one grilled cheese on a plate, spread with half the sauce, top with a patty and pickles, then add the second grilled cheese. Press gently and slice.

Notes

This burger is best eaten right away, while the grilled cheese is crisp. If you need to make more than one, cook the patties and sandwiches in batches and keep the finished ones warm in a low oven.
