- Combine salt, pepper, smoked paprika, and 1/2 tsp garlic powder. Pat chicken dry, rub with spice blend, then coat with olive oil. Let rest 10 minutes.
- Whisk hot sauce, melted butter, honey, remaining 1/2 tsp garlic powder, and Worcestershire sauce in a large bowl.
- Preheat grill to medium-high (400°F). Oil grates, then grill chicken 6 to 7 minutes per side until internal temp reaches 165°F. Rest 3 minutes.
- Toss hot chicken in the sauce until coated. Serve with celery and ranch or blue cheese.
Notes
If your chicken thighs are on the thick side, pound them lightly between two sheets of plastic wrap to an even 1/2-inch thickness so they cook uniformly. The honey will make the sauce a little sticky, which is exactly what you want for a glossy finish.
