Grilled BBQ Vegetables Recipe

Ingredients
  

  • 2 tbsp smoked paprika
  • 1 tbsp brown sugar
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp ground cumin
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper (optional)
  • 2 bell peppers, cut into 1-inch pieces
  • 2 medium zucchini, cut into 1-inch half-moons
  • 1 large red onion, cut into 1-inch wedges
  • 2 ears corn, cut into 1-inch rounds
  • 8 oz cremini mushrooms, halved
  • 3 tbsp olive oil
  • 1 lime, halved
  • 1/4 cup fresh cilantro leaves

Method
 

  1. Mix all the spices, brown sugar, and salt in a small bowl.
  2. In a large bowl, toss the vegetables with olive oil, then add the spice mix and toss until coated.
  3. Grill over medium-high heat (400°F) for 8 to 10 minutes, flipping once, until charred and tender.
  4. Transfer to a platter, squeeze lime juice over the top, and scatter cilantro. Serve warm.

Notes

The vegetables will soften a little more after they come off the grill, so pull them just as the centers turn tender. If you do not have fresh cilantro, flat-leaf parsley or a handful of sliced scallions adds a fresh finish.
