- Mix salt, pepper, garlic powder, and smoked paprika. Pat chicken dry, coat with olive oil, and season all over. Rest while the grill heats, about 10 minutes.
- Preheat grill to medium-high (400°F (200°C)). Oil grates, place thighs smooth side down, close lid, and cook 5 minutes.
- Flip thighs, baste cooked tops with half the BBQ sauce, close lid, and cook another 5 minutes until internal temp reaches 165°F (74°C).
- Rest chicken on a cutting board 5 minutes, slice against the grain, and serve with remaining sauce.
Notes
If you’re using a homemade sauce, make sure it’s thick enough to cling to the chicken without running off. Any sauce used for basting should not double as the fresh serving sauce; pour out what you’ll serve before you start brushing.
