Green Lentil Soup Recipe

Ingredients
  

  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika (optional)
  • 1 cup (200g) dried green lentils, rinsed and drained
  • 4 cups (960ml) vegetable broth
  • 1 bay leaf
  • Salt and black pepper, to taste
  • Juice of 1 lemon (about 2 tbsp)
  • Fresh parsley, chopped, for serving

Method
 

  1. Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery with a pinch of salt. Cook, stirring occasionally, for about 8 minutes, until softened.
  2. Add the garlic, cumin, and smoked paprika (if using). Cook, stirring constantly, for 1 minute until fragrant.
  3. Stir in the lentils, vegetable broth, and bay leaf. Bring to a boil, then reduce heat to low, cover partially, and simmer for 25–30 minutes, until lentils are tender.
  4. Remove from heat, discard the bay leaf, and stir in the lemon juice. Season with salt and pepper to taste.
  5. Ladle into bowls, top with parsley, and serve hot.

Notes

The soup thickens as it rests; add a splash of broth when reheating. For a creamier texture, blend a cup of the soup and stir it back in.
