Ingredients

  • 1 lb tomatillos, husked and rinsed
  • 1/2 medium white onion, cut into chunks
  • 2 garlic cloves, unpeeled
  • 1 jalapeño pepper
  • 1 tsp olive oil
  • 1/4 cup packed fresh cilantro leaves
  • 1 tbsp fresh lime juice
  • 1/2 tsp kosher salt
  • 2–3 tbsp water

Method

  1. Broil the tomatillos, onion, garlic, and jalapeño with olive oil until charred and softened, about 8 minutes.
  2. Peel the garlic, then blend all roasted vegetables with 2 tbsp water and salt until smooth, about 30 seconds.
  3. Pour into a saucepan and simmer over medium heat for 5–7 minutes, stirring occasionally.
  4. Remove from heat, stir in lime juice and cilantro, and serve warm.

Notes

For a spicier sauce, leave the jalapeño seeds in. The sauce will thicken as it cools, so thin it with a splash of water when reheating if needed.
