Green Curry Chicken Recipe

Ingredients
  

  • 1 1/2 lbs boneless skinless chicken thighs
  • 1 tbsp neutral oil
  • 4 oz green curry paste
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 cup chicken broth
  • 1 tbsp fish sauce
  • 1 tsp brown sugar
  • 1 red bell pepper
  • 1 cup green beans
  • 1/2 cup fresh Thai basil leaves
  • 1 lime
  • Steamed jasmine rice

Method
 

  1. Heat oil in a skillet over medium-high. Add curry paste and stir constantly for 1 minute until fragrant.
  2. Add sliced chicken and cook 5 to 6 minutes, stirring occasionally, until outside is opaque.
  3. Pour in coconut milk and chicken broth, then add bell pepper and green beans. Bring to a gentle boil, reduce heat, and simmer uncovered for 12 to 15 minutes.
  4. Remove from heat. Stir in fish sauce, brown sugar, lime juice, and torn basil. Adjust seasoning to taste.
  5. Ladle curry over steamed jasmine rice and serve with extra basil and lime wedges.

Notes

The curry will thicken as it sits, so if you make it ahead of time, add a little water or broth when reheating. Any leftover fresh basil goes into the bowl at the very end so it stays bright green and aromatic.
