Green Chili Chicken Soup Recipe

Ingredients
  

  • 1 tbsp olive oil
  • 1 medium yellow onion, chopped
  • 3 garlic cloves, minced
  • 2 (4 oz) cans diced green chilies
  • 1 tsp ground cumin
  • 1/2 tsp dried oregano
  • 4 cups low-sodium chicken broth
  • 3 cups cooked shredded chicken
  • 4 oz cream cheese, softened and cubed
  • 2 tbsp fresh lime juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh cilantro, chopped, for serving

Method
 

  1. Warm the olive oil in a large pot over medium heat. Add the onion and cook until soft, about 4 to 5 minutes. Stir in the garlic and green chilies and cook for 1 minute.
  2. Add the shredded chicken, chicken broth, cumin, oregano, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 15 minutes.
  3. Remove the pot from the heat. Use an immersion blender to partially blend the soup, leaving some chicken pieces whole. Alternatively, transfer 1 to 1.5 cups of the soup to a blender, purée, and return it to the pot.
  4. Return the pot to low heat. Add the cream cheese and stir until fully melted, about 2 minutes. Stir in the lime juice and adjust the salt to taste.
  5. Ladle the soup into bowls, top with fresh cilantro, and serve hot.

Notes

Rotisserie chicken saves time and adds a roasted flavor. The soup will thicken as it sits; when reheating, thin it with a little broth or water until it reaches your preferred consistency.
