- Warm the olive oil in a large pot over medium heat. Add the onion and cook until soft, about 4 to 5 minutes. Stir in the garlic and green chilies and cook for 1 minute.
- Add the shredded chicken, chicken broth, cumin, oregano, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 15 minutes.
- Remove the pot from the heat. Use an immersion blender to partially blend the soup, leaving some chicken pieces whole. Alternatively, transfer 1 to 1.5 cups of the soup to a blender, purée, and return it to the pot.
- Return the pot to low heat. Add the cream cheese and stir until fully melted, about 2 minutes. Stir in the lime juice and adjust the salt to taste.
- Ladle the soup into bowls, top with fresh cilantro, and serve hot.
Notes
Rotisserie chicken saves time and adds a roasted flavor. The soup will thicken as it sits; when reheating, thin it with a little broth or water until it reaches your preferred consistency.
