- Season chicken with salt, pepper, and cumin. Sear in oil until golden, about 5 minutes per side. Transfer to a plate.
- In the same skillet, cook onion until soft, 3-4 minutes. Add garlic, green chiles, and oregano; cook 1 minute.
- Pour in salsa verde and broth, scrape up browned bits. Return chicken to the pan, spoon sauce over. Cover and simmer 10-12 minutes until chicken reaches 165°F.
- Remove from heat. Stir in sour cream and lime juice. Serve over rice with fresh cilantro.
Notes
If using chicken breasts, pound them to a ½-inch thickness and reduce the simmer time to about 8 minutes. The sauce thickens slightly as it cools, so don’t be tempted to over-reduce it on the stovetop.
