Green Bean Bundles Recipe

Ingredients
  

  • 1 lb fresh green beans, trimmed
  • 12 slices thin-cut bacon
  • ¼ cup unsalted butter
  • ¼ cup packed light brown sugar
  • 2 tbsp low-sodium soy sauce

Method
 

  1. Blanch trimmed green beans in boiling water for 2 to 3 minutes, then transfer to an ice bath. Drain well and pat dry.
  2. Group 5 to 6 beans and wrap a slice of bacon around each bundle, placing them seam side down on a lined baking sheet.
  3. Melt the butter, then whisk in the brown sugar and soy sauce until smooth.
  4. Spoon half the glaze over the bundles and bake at 400°F (200°C) for 20 minutes. Add the remaining glaze and bake 5 to 8 minutes more.
  5. Broil on the top rack for 1 to 2 minutes until the bacon edges crisp and the glaze darkens.
  6. Transfer to a platter, remove any toothpicks, and serve hot.

Notes

If your beans are extra thin haricots verts, you can skip the blanching step and simply rinse and dry them well before wrapping. The bundles will still be tender after baking thanks to the steam inside the bacon.
