Greek Yogurt Mac and Cheese Recipe

Ingredients
  

  • 8 oz elbow macaroni
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 1/2 cups whole milk
  • 1/2 cup plain full-fat Greek yogurt
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Pinch of paprika (optional)

Method
 

  1. Boil the macaroni in salted water until al dente, reserving 1/2 cup pasta water before draining.
  2. Melt the butter in the same pot, whisk in the flour, and cook 1 minute. Slowly whisk in the milk and simmer 2 to 3 minutes until thickened.
  3. Remove from heat, stir in the cheese, salt, and pepper until smooth. Cool 30 seconds, then fold in the yogurt.
  4. Add the pasta to the sauce, toss to coat, and serve hot with paprika if desired.

Notes

If the sauce thickens after sitting, stir in a splash of milk or reserved pasta water when reheating. Keep the heat low to avoid breaking the sauce.
