Greek Yogurt Chicken Recipe

Ingredients
  

  • 1 cup plain Greek yogurt
  • 2 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 3 garlic cloves, minced
  • 1 tsp dried oregano
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • 4 boneless, skinless chicken breasts (about 1½ lbs total)

Method
 

  1. Whisk the yogurt, olive oil, lemon juice, garlic, oregano, salt, and pepper in a bowl.
  2. Pat chicken dry, then coat with the marinade. Refrigerate at least 30 minutes and up to 8 hours.
  3. Heat a little oil in a skillet over medium-high. Lift chicken from marinade, letting excess drip off. Sear 4 to 5 minutes per side until golden and internal temp reaches 165°F.
  4. Rest chicken on a cutting board 5 minutes, then slice against the grain and serve.

Notes

The marinating time is not counted in the prep time above. For the juiciest result, aim for at least 30 minutes, but the chicken is safe to cook immediately if you’re short on time. If your skillet starts to smoke, lower the heat a notch; the yogurt sugars can darken quickly.
